This Manuka honey (technically Leptospermum Sccorparium) comes from the World Heritage reserve in the western half of Tasmania. In the spectactular valleys and plains of World Heritage Forest and button grass, Manuka is the dominant species enabling the Wellington Apiary bees to gather nectar in some of the oldest living forests on this planet. There are very few places on the earth where bees can drink the cleanest water, breath the freshest air and gather nectar from Manuka trees to produce raw, untreat, pure organic honey and we are fortunate to have them in our beautiful island state. Manuka honey is not tastes great, but has been used by indigenous cultures and more recently in medicine to treat wounds due to its antibacterial and antifungal properties. Great for a hot lemon and honey drink to soothe a sore throat. The honey has a deep amber colour, thick texture and tastes of caramel with a distinctive savoury aftertaste.
